This flavorful vegetable strudel makes for a perfect party food, a creative appetizer or a portable lunch.
When I say “strudel”, the first thing that probably comes to your mind is “apple”. But despite my love for my grandma’s apple strudel (that stuff is unbeatable, I swear), there’s something even more comforting about stuffing the flaky puff pastry with a hearty veggie filling.
I went for the hearty combination of onions, carrots, mushrooms, sprouted mung beans and a little bit of spinach and the result exceeded my expectations! It got #meatlover approved too ;)
The onions and carrots add a little bit of sweetness and help tie the flavors together while mushrooms and mung beans add the chewy, even meaty texture. I threw in the spinach for some extra nutrition and greenness and flavored the whole thing with garlic, thyme and basil.
