Why “Quick & Easy Vegan Cheeses”? Because you, my amazing readers, have asked for it! So here goes :) Besides, I can very well relate to how difficult it is to go without or even just cut down on cheese.
Whether you’re going plant based, dairy free or you simply want to cut out some unnecessary saturated fat and cholesterol out of your diet, cheese is one of the hardest things to give up for most people. Sure, there is a number of plant-based alternatives out there you can buy but they have the unfortunate tendency to be either highly refined (and thus hardly healthy), outrageously expensive or completely disgusting. If you’re lucky enough, you’ll get all of that in just one package of “cheese”.
You can make your own dairy-free cheeses, but many of the available recipes require fairly high-level equipment, uncommon ingredients and a large dose of patience.
If you’ve been following my blog for some time, you probably know I’m no fan of any of those things. On top of healthy & delicious (duh!), I like uncomplicated, quick and foolproof. So that’s exactly what this plant-based cheesebook is all about. Simple recipes that ask for a maximum of 15 minutes hands on time and that you’ll need no unpronounceable ingredients for.
Seriously, the craziest thing I used is miso, and you can even sub salt for that. No prebiotic powder, no fermentation, nut milk bags and no lengthy aging of the cheeses. The longest time a recipe takes from start to finish is 8 hours and 15 minutes.
And yes, your participation is needed only for about 15 minutes of the time; the rest is soaking or baking. Plus the most sophisticated machine you’ll need is a food processor.

I know a number of you have quite a few dietary restrictions and preferences, which I took into account while developing the recipes. All of them are vegan, dairy-free, refined sugar-free and gluten-free and there is a number of soy-free, nut-free, oil-free, paleo or even raw vegan options!
