Extra refreshing, sweet and sour mango sorbet makes for a dream summer dessert or snack. As always, it’s secretly good for you too, so there’s no need to feel bad about going back for seconds.
This light, fruity dessert is perfect for the hot summer days when you feel like nibbling on something delicious but don’t want to spend too much time in the kitchen. Not to mention turning on the oven.
It’s also a lot more tangy and refreshing than banana based ice creams thanks to the lime and mint but still amazingly creamy. So if you’re fed up with bananas, this mango sorbet is a way to go.
All you’ll need is a food processor and about 5 minutes. You can peel, chop and freeze the mango ahead of time to have it ready whenever you feel like making yourself a little treat. Or if you’re really busy, opt in for store bought frozen mango (you might need to add a bit of sweetener to it though because it is often not as ripe).
This mint & lime infused mango sorbet works great with all kinds of diets and food allergies; it is completely gluten-free, sugar-free, vegan, paleo, nut-free, soy-free, oil-free, grain-free and raw. And it’s just 79 calories per serving!
- 1 very ripe mango, cubed and frozen
- 15-20 mint leaves
- juice of 1 lime
- optional: healthy sweetener to taste (I use about a tablespoon of erythritol or a bit of stevia if my mango is not sweet enough)
- Throw all ingredients in a food processor and pulse until smooth. Scrape sides as needed.
- Taste test and add the optional sweetener if needed.
- Serve right away.
